Method

Combine the eggs, water, salt, and pepper in a bowl and beat well.

Heat the butter in an omelet pan or small sauteuse.

Sauté any filling that needs to be cooked.

Add the egg mixture to the pan and stir continuously over moderate heat.

**When the eggs begin to coagulate, stop stirring and allow the eggs to form into a single sheet. Cook until the bottom is lightly browned and eggs reach 145°F (63°C) for 15 seconds.
