Ingredients

* mayonnaise
1/4 c.
chipotle in adobo sauce, minced
1/4 c.
green onion, minced
3 Tbsp.
lime juice
6 Tbsp.
cilantro, chopped

* chicken breasts, boneless, skinless, 6 oz. (170 g)
to taste
salt
to taste
white pepper
as needed
olive oil

hamburger buns
20 slices
* tomato slices

avocados, thinly sliced
Method

Mix the mayonnaise, chipotle, green onion, lime juice, and cilantro.

Season the chicken breasts with salt and pepper. Lightly coat the chicken breasts with olive oil.

**Grill the chicken breasts over high heat until they reach an internal temperature of 165°F (74°C). This should take about 10 minutes.

Spread the chipotle mayonnaise on the bottom of the bun. Top with a chicken breast. Top the chicken breast with tomato and avocado slices. Finish by placing the top of the bun on each sandwich. Serve.

Note
Chipotle in adobo sauce is sold in cans. Be sure to wear gloves when handling chiles as they can burn your skin. A suitable substitute is 2 Tbsp. (30 mL) chile powder.
If the avocado slices are not used shortly after slicing, toss them in a small amount of lemon juice to prevent them from browning.
