20 slices

rye bread

8 fl. oz.

* Thousand Island dressing

25 oz.

* thinly sliced corned beef

12 1/2 oz.

sauerkraut

20 oz.

* thinly sliced Swiss cheese

as needed

griddle shortening

Method

Spread the slices of bread out on the work surface. Apply a layer of Thousand Island dressing on one side of each slice.

On 10 slices of bread, place 2½ oz. (70 g) corned beef, followed by 1¼ oz. (35 g) sauerkraut, and 2 oz. (60 g) cheese.

Top with the remaining pieces of bread.

**Place the sandwiches on a hot griddle lightly coated with fat. Lightly brown sandwiches on both sides. When the sandwiches are browned on both sides and hot in the middle, remove from griddle and serve. Cooking time is about six to eight minutes. Hold at or above 135°F (57°C) until service.
