Ingredients
10 fl. oz.
* mayonnaise
7 Tbsp.
prepared horseradish
1 1/2 tsp.
red wine vinegar
1/2 tsp.
ground black pepper
20 slices
sourdough bread
25 oz.
* roast beef, sliced
10 oz.
* Cheddar cheese, sliced
20 slices
* tomatoes, sliced
Method

Mix mayonnaise, horseradish, vinegar, and black pepper.

Spread horseradish mayonnaise on each piece of bread.

Top ten slices each with 2½ oz. (70 g) roast beef, 1 oz. (30 g) Cheddar cheese, and two tomato slices.

Place the remaining bread on each of the assembled sandwiches so that the horseradish mayonnaise touches the tomato slices.

**Place sandwiches in a preheated panini grill. Cook for several minutes, or until the sandwich is nicely browned and the inside of the sandwich is hot. Hold at or above 135°F (57°C) until service.

Variations
—Substitute different meats such as ham, pastrami, and turkey for the beef. Other cheeses such as Colby, Monterey Jack, Swiss cheese, or mozzarella may be substituted for the Cheddar cheese. Likewise, other flavors such as mustard or raw garlic can be added to the mayonnaise.
