white bread

* American cheese slices

3 oz.

butter, softened

Method

Spread 10 slices of bread out on the work surface. Top each piece with 3 oz. (85 g) of American cheese. Top with remaining pieces of bread.

Butter the outside of the sandwich.

Cook on a hot griddle or in a hot sauté pan. Turn the sandwich over when lightly browned on one side.

**The sandwich is cooked when the cheese is melted and the bread is browned and crunchy. Cooking time is about six to eight minutes. Hold at or above 135°F (57°C) until service.

Variations

Croque Monsieur (KROK mohn sewr)—Make a griddled cheese sandwich with 2 oz. (60 g) of Swiss or Gruyère cheese and 1 oz. (30 g) boiled ham per sandwich. In addition, a small amount of Dijon mustard is also spread on the inside of the sandwich.

Grilled cheese with tomato—Add tomato slices to a grilled cheese sandwich.

Spicy grilled cheese—Replace the American cheese with Pepper Jack cheese.
