Ingredients
20 slices
white bread
12 oz.
* Swiss cheese, sliced
20 oz.
* cooked turkey, thinly sliced
12 oz.
* ham, thinly sliced
4 ea.
* eggs, beaten
12 fl. oz.
* milk
as needed
clarified butter
as needed
strawberry jam
Method

Place 10 slices of bread on a work surface. Place a slice of cheese on each piece of bread. Reserve half of the cheese.

Top the cheese with 2 oz. (60 g) of turkey and 1¼ oz. (35 g) of ham. Top with remaining cheese and then the remaining bread slice.

Mix the eggs and milk together until homogenous.

Dip the prepared sandwiches briefly in the egg and milk mixture.

Immediately cook the sandwiches on a well-greased (preferably with clarified butter) griddle or sauté pan.

**Once the first side is browned, turn the sandwich over and continue cooking. Sandwich should reach an internal temperature of 145°F (63°C).

**Hold at or above 135°F (57°C) until service. It is traditional to serve a side of strawberry jam with the Monte Cristo.

Variations
Alternative Monte Cristo—Traditionally, the Monte Cristo is a deep-fried sandwich. While it is easier to prepare the Monte Cristo as a griddled/sautéed sandwich, it is possible to also prepare it as a deep-fried sandwich. To deep-fry the sandwich, prepare as follows:
1—Heat the deep-fryer baskets in hot oil for at least five minutes so that they are very hot.
2—Once the sandwiches are dipped in the milk and egg mixture, place them in the hot deep-fryer baskets (which have been removed from the oil at this point).
3—Immediately drop the baskets in the deep-fryer. Shake the baskets if the sandwiches appear to be sticking to the bottom of the baskets.
4—Once the sandwiches are nicely browned, remove them from the fryer. Drain the sandwiches and serve as indicated in the above recipe.
