Ingredients
2 oz.
* eggs
8 oz.
* milk
6 oz.
sugar
1/2 tsp.
ground cinnamon
1 tsp.
vanilla extract
2 ea.
apples (large)
12 oz.
all-purpose flour
1 Tbsp.
baking powder
as needed
oil for deep-frying
as needed
powdered sugar
Method

Beat the eggs and mix with the milk, sugar, cinnamon, and vanilla extract.

Peel and core the apples and cut into small dice. Mix apple with the egg and milk mixture.

Sift the flour and baking powder, and mix into the other ingredients.

Heat oil in a pan or deep fryer to 350°F (177°C).

**Use a tablespoon to portion fritters and gently drop them into the oil. Turn them regularly and fry for four to five minutes. Hold unused fritter batter at or below 41°F (5°C).

Remove the fritters from the oil and drain on absorbent paper.
