escarole

radicchio

spinach

2 oz.

red onions, sliced

seasoned croutons

Italian-Style Vinaigrette (recipe 13.2)

Method

Remove cores, trim and cut lettuces into bite-size pieces.

**Wash and dry greens and radicchio.

Add onions and croutons. Toss to mix thoroughly.

Portion salad on chilled plates.

Serve with vinaigrette.
