Ingredients
4 Tbsp.
peanut oil
4 ea.
* eggs
6 oz.
onion, diced
4 tsp.
garlic, minced
2 1/4 lb.
* long-grain white rice, cooked
1 Tbsp.
sesame oil
8 oz.
* bean sprouts
4 oz.
green peas, IQF
to taste
soy sauce
to taste
green onion, thin sliced
Method

Heat one tablespoon of peanut oil in a wok or large skillet and cook eggs until firm. Break eggs into small pieces. Remove and set aside.

Add another tablespoon of oil to the skillet or wok and cook onions until soft but not brown. Add garlic and stir for thirty seconds. Remove and set aside.

Add remaining oil to pan and add rice. Stir until rice is hot.

**Add egg, onion, sesame oil, bean sprouts, peas, and soy sauce. Stir until everything is well mixed and reaches 155°F (68°C).
