Ingredients
Pineapple relish:
3 c.
pineapple, diced
3 oz.
red onion, brunoise
2 fl. oz.
lime juice
2 Tbsp.
parsley, chopped
to taste
salt
to taste
white pepper
Fish:
10 ea.
* mahi mahi fillets, 5–6 oz. (140–170 g) each
2 fl. oz.
vegetable oil
to taste
salt
to taste
white pepper
Method

Mix the pineapple, onion, lime juice, parsley, salt, and pepper. Allow it to marinate 30 minutes.

Preheat a grill.

Brush the mahi-mahi fillets with oil and season with salt and pepper.

**Grill the fillets first over high heat to create grill marks. Continue cooking over moderate heat until an internal temperature of 145°F (63°C) is reached. Flesh should be flaky and opaque.

Plate the fillets and serve accompanied by the relish.
