Ingredients
30 oz.
* cooked or canned garbanzo beans
2 tsp.
garlic, minced
3/4 tsp.
ground cumin
8 fl. oz.
* tahini (sesame paste)
3 ea.
lemons, juice of
2 fl. oz.
extra virgin olive oil
to taste
salt
to taste
white pepper
2 ea.
pita bread
2 Tbsp.
black olive slices
2 fl. oz.
* tomato, diced
1 Tbsp.
parsley, chopped
Method

Drain garbanzo beans, reserving the cooking or can liquid.

Place garbanzo beans, garlic, cumin, tahini, lemon juice, and olive oil in a food processor. Pureé until a smooth, thick paste is obtained. If the mixture is too dry, add a small amount of reserved cooking liquid.

Add salt and white pepper as needed.

Toast pita in a 400°F (204°C) oven until lightly toasted (about 10 minutes).

Cut each pita into eight small wedges.

Spoon a dollop of hummus on each wedge. (The hummus could also be applied using a pastry bag.)

Garnish each wedge with black olives and a sprinkle of both tomato and parsley.

**Wrap and refrigerate at or below 41°F (5°C) until service.
