* White Sauce (recipe 18.7)

4 oz.

* aged Cheddar cheese

to taste

salt

to taste

white pepper

Method

Bring white sauce to a boil.

**Reduce heat to very low. Add all the cheese and stir until incorporated. Once the cheese is melted, remove the sauce from heat. The sauce can be kept warm in a bain marie, or hot water bath at or above 135°F (57°C).

Note

Aged Cheddar cheese must be used for this sauce, as younger cheeses may not melt well into the white sauce. In addition, aged Cheddar cheese will give a better flavor to the sauce. Cheddar sauce can be served with many vegetables and chicken.
