Sweat onions and apples in the butter in a heavy saucepot.

Add cabbage, vinegar, water, honey, and sugar to saucepot and bring to a boil.

Tie the spices and bay leaf in a sachet and add to the cabbage.

Cover the pot and place in a 350°F (177°C) oven for 45 minutes. Stir the mixture occasionally during the cooking time.

Remove the pot from the oven and adjust the seasoning. Remove the sachet.

If thicker consistency is desired, combine the cornstarch and water, and add to the cabbage mixture. Place the pot back on the stovetop and simmer until desired consistency is achieved.
